Zucchini and Squash Pasta with Cilantro Pesto

This easy dish can be prepared in 15 minutes. It is a far superior cousin of the famous Italian Pasta Pesto dish. It is tastier, spicier and healthier – but it looks and feels just like the old and reliable.  Dare to try! 🙂

Here is how you do it:

Ingredients:
2 medium Zucchini and 1 medium Yellow squash
2 oz Feta Cheese
Cilantro Pesto – to taste – I use 2 Tbsp per serving

Cilantro Pesto Sauce
1 bunch Cilantro
1/2 C Basil leaves
5 medium Garlic cloves
1 C Pine Nuts
1/2 tsp Himalayan Pink Salt
1/2 tsp Black Pepper
1/4 c first cold pressed extra virgin Olive Oil

Preparation:

  1. Using a spiralizer – spiralize the vegetables and mix in a bowl. Transfer them into the plates in desired quantity
  2. Crumble feta cheese on top of the veggie pasta as desired
  3. Place all the ingredients for the pesto sauce in a food processor and process until smooth and creamy
  4. Scoop the cilantro pesto into each plate
  5. Enjoy!
